Locks in Fonts: When you convert your custom font to outlines or shapes (sometimes called "create outlines" in Adobe Illustrator or "convert to curves" in CorelDRAW), the text is no longer live font data. It becomes a pure vector shape, meaning the print shop's computer won't substitute a missing font if they don't have your custom typeface installed.
